Quinoa & Black Bean Cheeseburgers
These vegan quinoa black bean burger patties are PHENOMENAL. Spiced up with Kentucky Fox Crack Chilli Shaker they contain 4 pantry staples, and take about 4 minutes to make. No blender necessary! You can make these WITH A FORK!
Such a yummy plant protein-packed quick dinner guaranteed to be a hit. Even for the biggest carnivorous alpha. I’m in an all boy house with a growing tween and a tradie partner who will sigh like a pair of divas if an all vegetable dish is due to be served for tea. I can tell ya, I hear “yessss” whenever these bad boys are on the menu.

Quinoa + Black Bean Cheeseburgers
Recipe uses Kentucky Fox Crack Chilli Shaker and any hot sauce.
Feeds 4. Vegetarian. (Can be) vegan/ GF. (Can be) family friendly.
INGREDIENTS
Patties
1/4 cup quinoa
1/2 cup water
1 tin black beans or kidney beans, drained
1 tbsp KFC (or a little less if you want less spicy for the kids)
3 tbsp tomato paste
2 tbsp bread crumbs - or just enough to bind
Other burger ingredients
Soft buns, cut in half
Cos lettuce
Mayo
Thinly sliced red onion
Pickle slices
Mustard
Relish, tomato sauce, or any Crack Fox Hot Sauce
Cheese, grated (leave out if vegan, obvz)
METHOD
Bring quinoa and water to the boil in a saucepan on med-low heat. Pop lid on and simmer until quinoa is tender (about 15-20 mins). Allow to cool.
In a bowl mash beans with a fork. Stir in Kentucky Fox Crack Chilli Shaker to taste. Add in cooled quinoa, tomato paste, bread crumbs. Taste and add a little salt and pepper if need be.
In an oven friendly frying pan on medium (just means you don’t need to transfer the patties to a tray), drizzle a little olive oil. Brown the patties - about 2 or 3 mins each side.
Take the patties off the heat and on top of each pattie place a few slices of onion, 3 pickle slices, and the grated cheese on top. Pop in the oven on grill mode until cheese is melted and golden.
Pop your buns in the toaster - lightly toast.
Spread mayo and a little mustard on each half. Then a couple leaves of cos on the bottom half. Then pattie with the melted cheese and bits. Then relish or hot sauce. (I’ve used a homemade tomato relish here to use up some of our cherry toms going bananas in the garden and to be fam friendly.)
